- 1 cup unsweetened shredded coconut
- 1/2 cup chopped almonds
- 1 cup all-purpose flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 1/2 cup brown sugar, packed
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup chocolate chips
Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a bowl, mix together the flour, baking soda, and salt.
- In another bowl, cream the softened butter, granulated sugar, and brown sugar until light and fluffy.
- Add the egg and vanilla extract to the butter mixture and mix until combined.
- Gradually add the flour mixture to the wet ingredients and mix until just combined.
- Fold in the shredded coconut, chopped almonds, and chocolate chips.
- Drop rounded tablespoons of dough onto the prepared baking sheet.
- Bake for 10-12 minutes or until the edges are golden brown.
- Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
Notes
- For extra chocolatey flavor, feel free to drizzle melted chocolate over the cooled cookies.
- These cookies can also be made gluten-free by using a gluten-free flour blend.
