- 2 large apples, peeled and diced
- 1 tablespoon lemon juice

- 8 taco shells
- 1 cup cream cheese, softened
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
- 1/2 cup whipped cream
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, toss the diced apples with lemon juice, cinnamon, and sugar.
- Fill taco shells with the apple mixture and bake for 10 minutes.
- In another bowl, beat cream cheese, powdered sugar, and vanilla until smooth.
- Fold in whipped cream.
- Remove taco shells from the oven and let cool slightly.
- Fill each taco shell with the cheesecake mixture.
- Serve immediately, or chill in the refrigerator.
Notes
- For extra flavor, add chopped nuts or raisins to the apple filling.
- Chill the cheesecake mixture for a firmer texture if desired.
