- 1/2 cup granulated sugar
- 1 cup apple cider
- 1/2 cup unsalted butter, softened
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup cream cheese, softened
- 1/4 cup powdered sugar
- 1 teaspoon vanilla extract
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, whisk together flour, baking soda, cinnamon, nutmeg, and salt.
- In another bowl, beat the sugars and butter until light and fluffy.
- Add eggs and vanilla, then mix in the apple cider.
- Gradually add the dry ingredients to the wet mixture and mix until just combined.
- Drop spoonfuls of batter onto a baking sheet and bake for 10-12 minutes.
- Let cool before frosting with cream cheese mixture.
- For frosting, mix cream cheese, powdered sugar, and vanilla until smooth.
- Spread frosting on one pie and top with another.
Notes
- These whoopie pies can be made a day in advance and kept in the refrigerator.
- For an extra touch, add chopped apples to the frosting.
