Instructions
- In a small bowl, whisk together the lemon juice, honey, olive oil, salt, and pepper.
- In a large bowl, combine the apples, cucumber, and red onion.
- Pour the dressing over the salad and toss gently to coat.
- Sprinkle with herbs and nuts if using.
- Chill for 10–15 minutes before serving.
