Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 4 (8 ounce) packages cream cheese, softened
  • 1 cup powdered sugar
  • 1 cup Baileys Irish Cream
  • 1 teaspoon vanilla extract
  • 1 cup heavy whipping cream
  • 1/4 cup cocoa powder, for dusting

Instructions

  1. In a bowl, combine graham cracker crumbs and melted butter. Press the mixture into the bottom of a springform pan.
  2. In a mixing bowl, beat the cream cheese and powdered sugar together until smooth.
  3. Add the Baileys and vanilla extract to the cream cheese mixture, and mix until well combined.
  4. In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the Baileys mixture.
  5. Pour the cheesecake filling over the crust and smooth the top. Refrigerate for at least 4 hours or until set.
  6. Before serving, dust the top with cocoa powder and slice to enjoy.
