- 1 pound ground beef
- 1 can black beans, drained and rinsed
- 1 cup corn, frozen or canned
- 1 packet taco seasoning
- 10 flour tortillas
- 2 cups shredded cheese (cheddar or Mexican blend)
- 1 cup salsa
- 1 cup sour cream
- 1 bell pepper, diced
- 1 onion, diced
Instructions
- Preheat the oven to 350°F (175°C).
- In a large skillet, cook the ground beef over medium heat until browned. Add the diced onion and bell pepper, and sauté until softened.
- Stir in the black beans, corn, taco seasoning, and salsa. Cook for 5 minutes to combine flavors.
- In a greased baking dish, layer half of the tortillas, then half of the beef mixture, sprinkle with half of the cheese. Repeat the layers.
- Top with shredded cheese and cover with foil.
- Bake for 25 minutes, then remove foil and bake for an additional 10 minutes until golden and bubbly.
- Let it sit for 5 minutes before serving.
Notes
- For added spice, include jalapeños in the beef mixture.
- Feel free to use ground turkey or chicken as a substitute for beef.
