  • 1 pound ground beef
  • 1 can black beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 1 packet taco seasoning
  • 10 flour tortillas
  • 2 cups shredded cheese (cheddar or Mexican blend)
  • 1 cup salsa
  • 1 cup sour cream
  • 1 bell pepper, diced
  • 1 onion, diced

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large skillet, cook the ground beef over medium heat until browned. Add the diced onion and bell pepper, and sauté until softened.
  3. Stir in the black beans, corn, taco seasoning, and salsa. Cook for 5 minutes to combine flavors.
  4. In a greased baking dish, layer half of the tortillas, then half of the beef mixture, sprinkle with half of the cheese. Repeat the layers.
  5. Top with shredded cheese and cover with foil.
  6. Bake for 25 minutes, then remove foil and bake for an additional 10 minutes until golden and bubbly.
  7. Let it sit for 5 minutes before serving.

Notes

  • For added spice, include jalapeños in the beef mixture.
  • Feel free to use ground turkey or chicken as a substitute for beef.
