- 2 cups cooked chicken, shredded
- 1 cup black beans, drained and rinsed
- 1 cup corn, frozen or canned
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1 cup cheese, shredded
- 8 large tortillas
- 1 cup green chili sauce
Instructions
- Preheat the oven to 375°F (190°C).
- In a mixing bowl, combine the shredded chicken, black beans, corn, cumin, chili powder, and half of the cheese.
- Spoon the mixture onto each tortilla, roll them up, and place them seam-side down in a baking dish.
- Pour the green chili sauce over the burritos and top with the remaining cheese.
- Bake for 20-25 minutes until cheese is melted and bubbly.
Notes
- These burritos can be made ahead of time and frozen for later.
- Feel free to add any of your favorite toppings such as sour cream or avocado.
