- 1 ½ cups graham cracker crumbs
- ½ cup granulated sugar
- ½ cup unsalted butter, melted
- 24 ounces cream cheese, softened
- 1 cup powdered sugar
- 3 large eggs
- 1 teaspoon vanilla extract
- 1 cup fresh raspberries
Instructions
- Preheat the oven to 325°F (163°C).
- In a bowl, combine graham cracker crumbs, granulated sugar, and melted butter. Press mixture into the bottom of a springform pan.
- In a large bowl, beat cream cheese and powdered sugar until smooth. Add eggs one at a time, mixing well after each addition. Stir in vanilla.
- Gently fold in fresh raspberries and pour the filling onto the crust.
- Bake for 50-60 minutes, or until the center is set. Remove from oven and let cool.
- Chill in the refrigerator for at least 4 hours before serving.
Notes
- For a richer flavor, use full-fat cream cheese.
- Top with additional raspberries or whipped cream before serving.
