Ingredients

  • 1 pound fresh salmon fillet
  • 1/2 cup breadcrumbs
  • 1/4 cup fresh parsley, chopped
  • 1 egg
  • 2 cloves garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 ripe avocado
  • 2 tablespoons lime juice
  • 1/4 cup Greek yogurt

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a food processor, add the salmon fillet and pulse until finely chopped.
  3. In a large bowl, combine the chopped salmon, breadcrumbs, parsley, egg, garlic, salt, and pepper. Mix until well combined.
  4. Form the mixture into meatballs and place them on the prepared baking sheet.
  5. Bake in the preheated oven for about 15-20 minutes, until cooked through and lightly golden.
  6. While the meatballs are baking, make the avocado sauce by blending the avocado, lime juice, Greek yogurt, and a pinch of salt until smooth.
  7. Serve the baked salmon meatballs warm with the creamy avocado sauce.

Notes

  • For an extra kick, add some crushed red pepper flakes to the meatball mixture.
