- 1 pound fresh salmon fillet
- 1/2 cup breadcrumbs
- 1/4 cup fresh parsley, chopped
- 1 egg
- 2 cloves garlic, minced
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 ripe avocado
- 2 tablespoons lime juice
- 1/4 cup Greek yogurt
Instructions
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a food processor, add the salmon fillet and pulse until finely chopped.
- In a large bowl, combine the chopped salmon, breadcrumbs, parsley, egg, garlic, salt, and pepper. Mix until well combined.
- Form the mixture into meatballs and place them on the prepared baking sheet.
- Bake in the preheated oven for about 15-20 minutes, until cooked through and lightly golden.
- While the meatballs are baking, make the avocado sauce by blending the avocado, lime juice, Greek yogurt, and a pinch of salt until smooth.
- Serve the baked salmon meatballs warm with the creamy avocado sauce.
Notes
- For an extra kick, add some crushed red pepper flakes to the meatball mixture.
- These meatballs can also be served over pasta or in a salad.
