- 2 cups fresh spinach
- 1 cup sliced mushrooms
- 1 cup shredded cheese (cheddar or mozzarella)
- 4 large tortillas
- 2 tablespoons olive oil
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- In a skillet, heat olive oil over medium heat and add sliced mushrooms. Sauté until they are golden.
- Add fresh spinach, garlic powder, onion powder, salt, and pepper. Cook until the spinach is wilted.
- Place tortillas on a baking sheet. On one half of each tortilla, layer the mushroom and spinach mixture and sprinkle with cheese.
- Fold the tortillas over and bake for 15 minutes or until golden and crispy.
- Let cool slightly before slicing and serving.
Notes
- For extra flavor, add some taco seasoning to the mushroom and spinach mixture.
- Serve with salsa or sour cream for dipping.
