Ingredients

  • 2 cups fresh spinach
  • 1 cup sliced mushrooms
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 4 large tortillas
  • 2 tablespoons olive oil
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a skillet, heat olive oil over medium heat and add sliced mushrooms. Sauté until they are golden.
  3. Add fresh spinach, garlic powder, onion powder, salt, and pepper. Cook until the spinach is wilted.
  4. Place tortillas on a baking sheet. On one half of each tortilla, layer the mushroom and spinach mixture and sprinkle with cheese.
  5. Fold the tortillas over and bake for 15 minutes or until golden and crispy.
  6. Let cool slightly before slicing and serving.

Notes

  • For extra flavor, add some taco seasoning to the mushroom and spinach mixture.
  • Serve with salsa or sour cream for dipping.
