Baked Spinach Mushroom Quesadillas: Irresistibly Cheesy Goodness

Ingredients

  • 2 cups fresh spinach
  • 1 cup chopped mushrooms
  • 1 cup shredded cheese
  • 4 large tortillas
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a skillet, heat olive oil over medium heat.
  3. Add mushrooms and sauté for 5 minutes.
  4. Add spinach, garlic powder, salt, and pepper, and cook until wilted.
  5. Place one tortilla on a baking sheet, sprinkle half of the cheese, add the spinach and mushroom mixture, then top with the remaining cheese and another tortilla.
  6. Brush the top tortilla with olive oil and bake for 10-15 minutes, or until golden and crispy.
  7. Cut into wedges and serve warm.

Notes

  • For extra zing, add diced jalapeños.
  • Feel free to use any cheese you prefer.
