- 2 cups fresh spinach
- 1 cup chopped mushrooms
- 1 cup shredded cheese
- 4 large tortillas
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
Instructions
- Preheat the oven to 400°F (200°C).
- In a skillet, heat olive oil over medium heat.
- Add mushrooms and sauté for 5 minutes.
- Add spinach, garlic powder, salt, and pepper, and cook until wilted.
- Place one tortilla on a baking sheet, sprinkle half of the cheese, add the spinach and mushroom mixture, then top with the remaining cheese and another tortilla.
- Brush the top tortilla with olive oil and bake for 10-15 minutes, or until golden and crispy.
- Cut into wedges and serve warm.
Notes
- For extra zing, add diced jalapeños.
- Feel free to use any cheese you prefer.
