Baked Sweet Potato Bliss with Turkey Bacon and Spinach Delight

Ingredients

  • 4 medium sweet potatoes
  • 6 slices turkey bacon
  • 2 cups fresh spinach
  • 1/2 cup shredded cheese
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash and pierce the sweet potatoes with a fork. Bake for about 45 minutes or until tender.
  3. In a skillet, cook the turkey bacon until crispy, then crumble.
  4. In the same skillet, sauté the spinach until wilted.
  5. Once the sweet potatoes are done, slice them open and fluff the insides with a fork.
  6. Top each sweet potato with crumbled turkey bacon, sautéed spinach, shredded cheese, olive oil, garlic powder, smoked paprika, salt, and pepper.
