- 4 medium sweet potatoes
- 6 slices turkey bacon
- 2 cups fresh spinach
- 1/2 cup shredded cheese
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon smoked paprika
- Salt to taste
- Black pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- Wash and pierce the sweet potatoes with a fork. Bake for about 45 minutes or until tender.
- In a skillet, cook the turkey bacon until crispy, then crumble.
- In the same skillet, sauté the spinach until wilted.
- Once the sweet potatoes are done, slice them open and fluff the insides with a fork.
- Top each sweet potato with crumbled turkey bacon, sautéed spinach, shredded cheese, olive oil, garlic powder, smoked paprika, salt, and pepper.

- For a vegetarian option, omit the turkey bacon.
