- 4 large sweet potatoes
- 6 strips turkey bacon
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
- 2 green onions, chopped
- 1 teaspoon garlic powder
- Salt to taste
- Pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- Wash and pierce the sweet potatoes with a fork.
- Bake the sweet potatoes for about 45 minutes, or until tender.
- While the potatoes are baking, cook the turkey bacon in a skillet until crispy. Then chop it into small pieces.
- When the sweet potatoes are done, cut them in half lengthwise and scoop out a little of the flesh, mixing it with cheese, sour cream, garlic powder, salt, and pepper.
- Fill the sweet potato skins with the mixture and top with chopped turkey bacon and green onions.
- Return to the oven for an additional 10 minutes.
