Ingredients

  • 4 large sweet potatoes
  • 6 strips turkey bacon
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 2 green onions, chopped
  • 1 teaspoon garlic powder
  • Salt to taste
  • Pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash and pierce the sweet potatoes with a fork.
  3. Bake the sweet potatoes for about 45 minutes, or until tender.
  4. While the potatoes are baking, cook the turkey bacon in a skillet until crispy. Then chop it into small pieces.
  5. When the sweet potatoes are done, cut them in half lengthwise and scoop out a little of the flesh, mixing it with cheese, sour cream, garlic powder, salt, and pepper.
  6. Fill the sweet potato skins with the mixture and top with chopped turkey bacon and green onions.
  7. Return to the oven for an additional 10 minutes.
