- 4 chicken breasts
- 1 cup cherry tomatoes

- 1/2 cup mozzarella cheese
- 1/2 cup parmesan cheese
- 2 cloves garlic, minced
- 1 teaspoon Italian seasoning

- 2 tablespoons olive oil
Instructions
- Preheat the oven to 375°F (190°C).
- In a large oven-safe skillet, heat olive oil over medium heat and sauté garlic until fragrant.
- Add chicken breasts and cook until browned on both sides.
- Add cherry tomatoes, spinach, Italian seasoning, and red pepper flakes, stirring to combine.
- Top the mixture with mozzarella and parmesan cheese.
- Transfer the skillet to the preheated oven and bake for 25-30 minutes, or until the chicken is cooked through.
- Remove from oven and let rest for a few minutes before serving.
Notes
- Feel free to add other vegetables such as zucchini or bell peppers.
- For a gluten-free version, use a gluten-free pasta or omit pasta altogether.
