- 3 pounds beef chuck roast
- 1 tablespoon ground cumin
- 1 tablespoon dried oregano
- 2 teaspoons salt
- 1 tablespoon black pepper
- 4 cloves garlic, minced
- 1 onion, chopped
- 2 chipotle peppers in adobo sauce
- 1 tablespoon adobo sauce
- 1/4 cup lime juice
- 2 cups beef broth
Instructions
- In a bowl, mix cumin, oregano, salt, and pepper together.
- Rub the spice mixture all over the chuck roast.
- Place the roast in the slow cooker.
- Add garlic, onion, chipotle peppers, adobo sauce, lime juice, and beef broth.
- Cover and cook on low for 8 to 10 hours or until tender.
- Shred the beef with two forks and mix with the juices.
- Serve with tortillas and desired toppings.
Notes
- For extra flavor, marinate the beef overnight with the spice mixture.
- Adjust the number of chipotle peppers for spice preference.
