  • 1 can enchilada sauce
  • 2 cups shredded cheese
  • 1 package corn tortillas
  • 1 can black beans, drained
  • 1 cup chopped onions
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a skillet, heat olive oil over medium heat and sauté onions and garlic until soft.
  3. Add ground beef and cook until browned. Drain excess fat.
  4. Stir in black beans and half of the enchilada sauce.
  5. In a baking dish, layer corn tortillas, the beef mixture, and cheese. Repeat layers.
  6. Pour remaining enchilada sauce on top and sprinkle with cheese.
  7. Bake for 25-30 minutes until cheese is bubbly.
  8. Let it cool for a few minutes before serving.
