- 1 pound ground beef
- 1 can enchilada sauce
- 2 cups shredded cheese
- 1 package corn tortillas
- 1 can black beans, drained
- 1 cup chopped onions
- 2 cloves garlic, minced
- 1 tablespoon olive oil
Instructions
- Preheat your oven to 350°F (175°C).
- In a skillet, heat olive oil over medium heat and sauté onions and garlic until soft.
- Add ground beef and cook until browned. Drain excess fat.
- Stir in black beans and half of the enchilada sauce.
- In a baking dish, layer corn tortillas, the beef mixture, and cheese. Repeat layers.
- Pour remaining enchilada sauce on top and sprinkle with cheese.
- Bake for 25-30 minutes until cheese is bubbly.
- Let it cool for a few minutes before serving.
Notes
- This casserole can be made ahead and frozen for later use.
- Feel free to add other toppings like sour cream or avocado.
