Ingredients

  • 1 cup Biscoff cookie crumbs
  • 1/2 cup unsalted butter, melted
  • 16 ounces cream cheese, softened
  • 1 cup powdered sugar
  • 1/2 cup Biscoff spread
  • 1 teaspoon vanilla extract
  • 1 cup heavy whipping cream
  • 1/4 cup caramel sauce

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine cookie crumbs and melted butter. Press mixture into the bottom of a springform pan.
  3. In another bowl, beat cream cheese until smooth. Add powdered sugar, Biscoff spread, and vanilla. Mix until well combined.
  4. In a separate bowl, whip heavy cream until stiff peaks form. Gently fold into the cream cheese mixture.
  5. Pour filling over the crust and smooth the top. Drizzle with caramel sauce.
  6. Bake for 45 minutes, then let cool completely before refrigerating for at least 4 hours.
  7. Remove from pan, slice, and serve topped with additional caramel sauce if desired.

Notes

  • For a stronger Biscoff flavor, you can add more Biscoff spread to the filling.
  • This cheesecake can be made a day in advance for better flavor.
