- 2 cups all-purpose flour
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/4 cup sugar
- 1/2 cup unsalted butter, cold and cubed
- 1 cup fresh blueberries
- 3/4 cup buttermilk
Instructions
- Preheat the oven to 425°F (220°C).
- In a large bowl, whisk together the flour, baking powder, salt, and sugar.
- Cut in the cold butter until the mixture resembles coarse crumbs.
- Gently fold in the blueberries.
- Stir in the buttermilk until just combined.
- Turn the dough out onto a floured surface and knead gently.
- Roll out the dough to about 1 inch thick and cut out biscuits using a round cutter.
- Place the biscuits on a baking sheet and bake for 15-20 minutes or until golden brown.
- Serve warm with butter or jam.
Notes
- For a sweeter biscuit, add a bit more sugar to the dough.
- These can be made with frozen blueberries if fresh are not available.
