- 2 cups fresh blueberries
- 1 cup sugar
- 1 teaspoon lemon juice
- 1 package pie crusts
- 1 egg (for egg wash)
- 1 tablespoon powdered sugar (for dusting)
Instructions
- Preheat your oven to 425°F (220°C).
- In a medium saucepan, combine fresh blueberries, sugar, and lemon juice, cooking until the mixture starts to bubble.
- Roll out the pie crusts and cut them into circles.
- Place a spoonful of the blueberry mixture in the center of each circle.
- Fold the crust over the filling and pinch the edges to seal.
- Place the bombs on a baking sheet and brush with egg wash.
- Bake for 15-20 minutes, or until golden brown.
- Sprinkle with powdered sugar before serving.
Notes
- For a more intense flavor, allow the blueberry filling to cool before placing it in the crust.
- These can be served warm or at room temperature.
