- 1 cup fresh blueberries
- 1/2 cup sugar
- 1 tablespoon lemon juice
- 1 teaspoon cornstarch
- 1 package refrigerated pie crusts
- 1 egg (for egg wash)
Instructions
- Preheat your oven to 375°F (190°C).
- In a bowl, mix the blueberries, sugar, lemon juice, and cornstarch.
- Roll out the pie crusts and cut them into circles.
- Place a spoonful of the blueberry mixture in the center of each circle.
- Fold the crust over and seal the edges.
- Brush the tops with egg wash.
- Bake for 20-25 minutes or until golden brown.
Notes
- For a sweeter treat, add a sprinkle of cinnamon to the filling.
- Serve warm with a scoop of vanilla ice cream.
