  • 1/2 cup pistachios, chopped

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, cream together the softened butter and sugars.
  3. Add the vanilla extract and mix well.
  4. In another bowl, combine the oats, flour, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet ingredients and mix until combined.
  6. Fold in the dried blueberries and pistachios.
  7. Drop spoonfuls of the dough onto a baking sheet lined with parchment paper.
  8. Bake for 12-15 minutes or until golden brown.
  9. Allow to cool on a wire rack before serving.

Notes

  • For a nuttier flavor, toast the pistachios before adding them to the mix.
