- 1 cup all-purpose flour
- 1/2 cup granulated sugar
- 1/2 cup unsalted butter, softened
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1 cup pastry cream
- 1/2 cup chocolate ganache
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
- In a large mixing bowl, cream the butter and sugar together until light and fluffy.
- Add the eggs one at a time, followed by the vanilla extract.
- In a separate bowl, whisk together the flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet mixture and mix until just combined.
- Fill the cupcake liners with batter and bake for 20-25 minutes or until a toothpick comes out clean.
- Once cooled, fill each cupcake with pastry cream and top with chocolate ganache.
Notes
- Make sure the cupcakes are completely cooled before filling them.
- Store extra chocolate ganache in the fridge for up to a week.
