- 1 cup ricotta cheese
- 2 cups fresh spinach
- 1 lemon, zested and juiced

- 1/4 teaspoon black pepper
- 1/4 cup grated Parmesan cheese
Instructions
- Cook the pasta according to package instructions.
- In a large skillet, heat olive oil over medium heat and add spinach, cooking until wilted.
- In a bowl, mix together the ricotta, lemon juice, lemon zest, salt, and pepper.
- Add the cooked pasta to the skillet and stir in the ricotta mixture until well combined.
- Sprinkle with Parmesan cheese and serve warm.
Notes
- Serve with additional lemon zest for a brighter flavor.
- Can be made vegetarian by omitting any meat.
