- 1 cup all-purpose flour
- 2 tablespoons brown sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 cup milk
- 1 large egg
- 2 tablespoons melted butter
- 1 teaspoon vanilla extract
- 1 tablespoon ground cinnamon
- 1/4 cup brown sugar (for swirl)
Instructions
- In a large bowl, whisk together flour, baking powder, brown sugar, and salt.
- In another bowl, combine milk, egg, melted butter, and vanilla extract.
- Add the wet ingredients to the dry ingredients, and mix until just combined.
- In a small bowl, mix together ground cinnamon and brown sugar.
- Heat a skillet over medium heat and pour in batter to form pancakes.
- Immediately sprinkle a small amount of the cinnamon-brown sugar mixture on top of the pancake.
- Cook until bubbles form on the surface, then flip and cook until golden brown.
- Serve warm with syrup.
Notes
- For fluffier pancakes, do not overmix the batter.
- Experiment with adding nuts or fruit to the batter.
