Brown-Sugar Cinnamon Roasted Acorn Squash Stuffed with Fried Apples Delight

A delicious recipe for acorn squash roasted with brown sugar and cinnamon, then stuffed with fried apples.

Ingredients

  • 2 acorn squashes
  • 1/4 cup brown sugar
  • 1 teaspoon ground cinnamon
  • 4 apples, diced
  • 2 tablespoons butter
  • 1 tablespoon lemon juice
  • 1/4 teaspoon salt
  • 1/2 cup walnuts, chopped (optional)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Cut the acorn squashes in half and scoop out the seeds.
  3. In a small bowl, mix together brown sugar and cinnamon. Rub the mixture inside the squash halves.
  4. Place the squashes cut-side down on a baking sheet and roast for 30 minutes.
  5. In a pan, melt the butter over medium heat and add the diced apples, lemon juice, and salt. Cook until apples are soft.
  6. Stuff the roasted squashes with the fried apples and sprinkle with walnuts if desired.
  7. Return to the oven and bake for an additional 10 minutes.
  8. Serve warm.

Notes

  • For enhanced flavor, add a pinch of nutmeg to the apples.
  • The recipe can be easily doubled for larger gatherings.
