  • 1 pound boneless, skinless chicken breasts
  • 1 can white beans, drained and rinsed
  • 1 can diced tomatoes
  • 1 cup chicken broth
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon Cajun seasoning
  • 1 teaspoon olive oil
  • 1 cup corn
  • 1 bell pepper, chopped

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the onion, bell pepper, and garlic, and sauté until softened.
  3. Stir in the Cajun seasoning and cook for another minute.
  4. Add the chicken breasts, white beans, diced tomatoes, chicken broth, and corn.
  5. Bring to a boil, then reduce heat and let simmer for 20-25 minutes until the chicken is cooked through.
  6. Shred the chicken in the pot and stir everything together.
  7. Serve hot and enjoy!
