Ingredients

- 1 pound boneless, skinless chicken breasts
- 1 can white beans, drained and rinsed
- 1 can diced tomatoes
- 1 cup chicken broth
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tablespoon Cajun seasoning
- 1 teaspoon olive oil
- 1 cup corn
- 1 bell pepper, chopped
Instructions
- In a large pot, heat the olive oil over medium heat.
- Add the onion, bell pepper, and garlic, and sauté until softened.
- Stir in the Cajun seasoning and cook for another minute.
- Add the chicken breasts, white beans, diced tomatoes, chicken broth, and corn.
- Bring to a boil, then reduce heat and let simmer for 20-25 minutes until the chicken is cooked through.
- Shred the chicken in the pot and stir everything together.
- Serve hot and enjoy!
Notes
- This chili can be made in advance and tastes even better the next day.
- Adjust the spice level by adding more or less Cajun seasoning.
