- 1 pound boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 1 onion, diced
- 3 cloves garlic, minced
- 1 can (15 ounces) cannellini beans, drained and rinsed
- 1 can (15 ounces) corn, drained
- 4 cups chicken broth
- 2 teaspoons Cajun seasoning
- 1 teaspoon thyme
- 1/2 teaspoon cayenne pepper (optional)
- 1 cup heavy cream
- salt and pepper to taste
Instructions
- In a large pot, heat olive oil over medium heat. Add the diced onions and cook until softened.
- Add minced garlic and sauté for another minute.
- Stir in the chicken breasts and brown on all sides.
- Pour in the chicken broth and add the cannellini beans, corn, Cajun seasoning, thyme, and cayenne pepper if using.
- Bring to a simmer and cook until the chicken is cooked through, about 20 minutes.
- Remove the chicken, shred it, and return it to the pot.
- Stir in the heavy cream and season with salt and pepper to taste.
- Simmer for another 5-10 minutes before serving.

- Serve with crusty bread for a complete meal.
