  • 1 pound boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 can (15 ounces) cannellini beans, drained and rinsed
  • 1 can (15 ounces) corn, drained
  • 4 cups chicken broth
  • 2 teaspoons Cajun seasoning
  • 1 teaspoon thyme
  • 1/2 teaspoon cayenne pepper (optional)
  • 1 cup heavy cream
  • salt and pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat. Add the diced onions and cook until softened.
  2. Add minced garlic and sauté for another minute.
  3. Stir in the chicken breasts and brown on all sides.
  4. Pour in the chicken broth and add the cannellini beans, corn, Cajun seasoning, thyme, and cayenne pepper if using.
  5. Bring to a simmer and cook until the chicken is cooked through, about 20 minutes.
  6. Remove the chicken, shred it, and return it to the pot.
  7. Stir in the heavy cream and season with salt and pepper to taste.
  8. Simmer for another 5-10 minutes before serving.
