Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, cream together the softened butter and sugar until light and fluffy.
- Add the egg and vanilla, mixing well.
- In another bowl, whisk together the flour, baking powder, and salt; gradually add to the creamed mixture.
- Roll the dough into balls and place them in a muffin tin, pressing down to form cups.
- Bake for 10-12 minutes or until lightly golden.
- Let them cool completely.
- In a separate bowl, mix ricotta cheese, powdered sugar, and cinnamon until smooth.
- Fold in the mini chocolate chips.
- Spoon the filling into the cooled cookie cups.
Notes
- For extra flavor, consider adding a splash of lemon zest to the filling.
