- 1/2 cup unsalted butter, softened
- 1 cup brown sugar, packed
- 1 large egg
- 1 teaspoon vanilla extract
- 8 ounces cream cheese, softened
- 1/2 cup caramel sauce
- 1/4 cup chopped pecans
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, whisk together the flour, cocoa powder, baking soda, and salt.
- In another bowl, cream the butter and brown sugar until light and fluffy.
- Add the egg and vanilla extract to the butter mixture and mix well.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- In a separate bowl, beat the cream cheese until smooth, then blend in the caramel sauce.
- Drop spoonfuls of the cookie dough on a lined baking sheet, adding a dollop of the caramel cheesecake mixture on top of each.
- Sprinkle chopped pecans over the cookies.
- Bake for 12-15 minutes until set.
- Let cool before serving.
Notes
- For a richer flavor, use dark chocolate cocoa powder.
- These cookies pair well with ice cream.
