  • 1 1/2 cups chocolate cookie crumbs
  • 1/4 cup sugar
  • 1/2 cup unsalted butter, melted
  • 24 ounces cream cheese, softened
  • 1 cup sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup brewed coffee, cooled
  • 1/2 cup caramel sauce
  • 1/2 cup chocolate chips

Instructions

  1. Preheat the oven to 325°F (163°C).
  2. In a bowl, mix chocolate cookie crumbs, sugar, and melted butter.
  3. Press the mixture into the bottom of a springform pan.
  4. In a large bowl, beat cream cheese and sugar until smooth.
  5. Add eggs one at a time, mixing well after each addition.
  6. Stir in vanilla extract and cooled coffee.
  7. Pour the filling over the crust and smooth the top.
  8. Bake for 50-60 minutes or until set.
  9. Let it cool, then refrigerate for at least 4 hours.
  10. Drizzle caramel sauce and sprinkle chocolate chips before serving.

  • For a richer flavor, use dark chocolate cookies.
  • Allow cheesecake to cool in the oven to prevent cracking.
