- 1 1/2 cups chocolate cookie crumbs
- 1/4 cup sugar
- 1/2 cup unsalted butter, melted
- 24 ounces cream cheese, softened
- 1 cup sugar
- 3 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup brewed coffee, cooled
- 1/2 cup caramel sauce
- 1/2 cup chocolate chips
Instructions
- Preheat the oven to 325°F (163°C).
- In a bowl, mix chocolate cookie crumbs, sugar, and melted butter.
- Press the mixture into the bottom of a springform pan.
- In a large bowl, beat cream cheese and sugar until smooth.
- Add eggs one at a time, mixing well after each addition.
- Stir in vanilla extract and cooled coffee.
- Pour the filling over the crust and smooth the top.
- Bake for 50-60 minutes or until set.
- Let it cool, then refrigerate for at least 4 hours.
- Drizzle caramel sauce and sprinkle chocolate chips before serving.
Notes
- For a richer flavor, use dark chocolate cookies.
- Allow cheesecake to cool in the oven to prevent cracking.
