- 2 pounds sweet potatoes
- 3 tablespoons maple syrup
- 1 teaspoon cinnamon
- 1 cup feta cheese, crumbled
- 1 cup walnuts, chopped

Instructions
- Preheat the oven to 400°F (200°C).
- Peel and cube the sweet potatoes.
- In a large bowl, toss sweet potatoes with olive oil, maple syrup, and cinnamon.
- Spread sweet potatoes on a baking sheet in a single layer.
- Roast in the oven for 25-30 minutes or until tender and caramelized.
- Remove from the oven and toss with feta and walnuts before serving.
Notes
- For extra flavor, add a pinch of nutmeg.
- Can be served warm or at room temperature.
