- 1 cup grated carrots
- 1 cup grated zucchini
- 1 cup applesauce
- 2 cups all-purpose flour
- 1 tsp baking soda
- 1/2 tsp baking powder
- 1 tsp ground cinnamon
- 1/2 tsp salt
- 1 cup sugar
- 1/2 cup vegetable oil
- 3 eggs
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, mix together the grated carrots, zucchini, and applesauce.
- In another bowl, combine flour, baking soda, baking powder, cinnamon, and salt.
- Add the dry ingredients to the wet ingredients and stir until just combined.
- In a separate bowl, beat the sugar, oil, and eggs together until smooth.
- Add the sugar mixture to the batter and mix well.
- Pour the batter into a greased loaf pan.
- Bake for 50-60 minutes or until a toothpick comes out clean.
- Let cool before slicing.
Notes
- For enhanced flavor, add chopped nuts or raisins.
- This bread can be made ahead of time and tastes even better after a day.
