Instructions
- Preheat the oven to 350°F (175°C) and grease a baking pan.
- In a large bowl, mix the grated carrots, sugars, oil, and applesauce until combined.
- Add the eggs one at a time, mixing well after each addition.
- In a separate bowl, whisk together the flour, baking powder, baking soda, cinnamon, and salt.
- Gradually add the dry ingredients to the wet mixture and stir until just combined.
- Pour the batter into the prepared pan and smooth the top.
- Bake for 25-30 minutes or until a toothpick comes out clean.
- Let it cool completely before frosting.
- For the frosting, beat the cream cheese and butter together until smooth. Gradually add the powdered sugar and mix until creamy. Add vanilla extract and mix well.
- Spread the frosting over the cooled cake bars and slice into squares.
