  • 8 oz cream cheese, softened
  • 1/4 cup butter, softened
  • 2 cups powdered sugar
  • 1 tsp vanilla extract for frosting

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a baking pan.
  2. In a large bowl, mix the grated carrots, sugars, oil, and applesauce until combined.
  3. Add the eggs one at a time, mixing well after each addition.
  4. In a separate bowl, whisk together the flour, baking powder, baking soda, cinnamon, and salt.
  5. Gradually add the dry ingredients to the wet mixture and stir until just combined.
  6. Pour the batter into the prepared pan and smooth the top.
  7. Bake for 25-30 minutes or until a toothpick comes out clean.
  8. Let it cool completely before frosting.
  9. For the frosting, beat the cream cheese and butter together until smooth. Gradually add the powdered sugar and mix until creamy. Add vanilla extract and mix well.
  10. Spread the frosting over the cooled cake bars and slice into squares.
