- 2 cups all-purpose flour
- 2 cups granulated sugar
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon

- 1 cup vegetable oil
- 4 large eggs
- 3 cups shredded carrots
- 1 cup crushed pineapple, drained
- 1 cup chopped walnuts (optional)
- 8 oz cream cheese, softened
- 4 cups powdered sugar
- 1 teaspoon vanilla extract
Instructions
- Preheat the oven to 350°F (175°C) and grease a baking pan.
- In a large bowl, mix together the flour, sugar, baking powder, baking soda, cinnamon, and salt.
- Add the oil and eggs to the dry ingredients, and mix until well combined.
- Fold in the shredded carrots, crushed pineapple, and walnuts.
- Pour the batter into the prepared pan and smooth the top.
- Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
- While the bars are baking, prepare the cream cheese frosting by beating together the softened cream cheese, powdered sugar, and vanilla extract until smooth.
- Allow the bars to cool completely before frosting.
- Spread the cream cheese frosting over the cooled bars and cut into squares to serve.
Notes
- For a more intense flavor, let the frosted bars sit in the refrigerator for a few hours before serving.
