- 2 cups grated carrots
- 1 cup all-purpose flour
- 1 cup granulated sugar
- 1/2 cup brown sugar
- 1 cup cream cheese
- 1/2 cup unsalted butter
- 4 large eggs
- 1 tsp vanilla extract

- 1 tsp baking soda
- 1 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1 cup chopped walnuts
Instructions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine the grated carrots, sugars, and melted butter until well combined.
- Add in the eggs, one at a time, mixing well after each addition. Stir in the vanilla extract.
- In a separate bowl, whisk together the flour, baking powder, baking soda, cinnamon, and nutmeg.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined. Fold in the walnuts.
- Pour the batter into a greased springform pan and smooth the top.
- Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
- Allow to cool before serving.

- For an extra touch, top with cream cheese frosting.
- Chill the cheesecake for a few hours before serving for the best flavor.
