- 2 cups all-purpose flour

- 1/2 cup vegetable oil
- 2 large eggs
- 2 cups grated carrots
- 1 cup chopped walnuts
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, mix the flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
- In another bowl, cream together the granulated sugar, brown sugar, and vegetable oil.
- Beat in the eggs one at a time.
- Gradually add the dry ingredients to the wet ingredients.
- Fold in the grated carrots and walnuts.
- Drop spoonfuls of the dough onto a baking sheet.
- Bake for 12-15 minutes, or until the edges are golden.
Notes
- These cookies can be frosted with cream cheese frosting for extra sweetness.
