- 2 cups cooked chicken, shredded
- 1 cup cashews, chopped

- 1/2 cup red grapes, halved
- 1/4 cup green onions, sliced
- 1/2 cup mayonnaise
- 1 tablespoon Dijon mustard
- 1 teaspoon lemon juice
- Salt and pepper to taste
Instructions
- In a large bowl, combine the shredded chicken, cashews, celery, grapes, and green onions.
- In a separate bowl, whisk together the mayonnaise, Dijon mustard, lemon juice, salt, and pepper.
- Pour the dressing over the chicken mixture and stir until well combined.
- Chill in the refrigerator for at least 30 minutes before serving.
Notes
- Serve on a bed of lettuce or in a sandwich.
- For added crunch, consider adding chopped apples or water chestnuts.
