  • 6 slices turkey bacon
  • 1 cup mushrooms, sliced
  • 1 cup Madeira wine
  • 1/2 cup chicken broth
  • 1/2 cup mozzarella cheese, shredded
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 tablespoon fresh thyme, chopped

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a skillet, heat olive oil and sauté garlic until fragrant.
  3. Add the mushrooms and cook until tender.
  4. Stir in the Madeira wine and chicken broth, then simmer.
  5. Season the chicken breasts with salt and pepper, then wrap each with turkey bacon.
  6. In a baking dish, place the wrapped chicken and pour the mushroom sauce over it.
  7. Top with mozzarella cheese and sprinkle with thyme.
  8. Bake for 25-30 minutes or until the chicken is cooked through.
