- 4 chicken breasts
- 6 slices turkey bacon
- 1 cup mushrooms, sliced
- 1 cup Madeira wine
- 1/2 cup chicken broth
- 1/2 cup mozzarella cheese, shredded
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 tablespoon fresh thyme, chopped
Instructions
- Preheat the oven to 375°F (190°C).
- In a skillet, heat olive oil and sauté garlic until fragrant.
- Add the mushrooms and cook until tender.
- Stir in the Madeira wine and chicken broth, then simmer.
- Season the chicken breasts with salt and pepper, then wrap each with turkey bacon.
- In a baking dish, place the wrapped chicken and pour the mushroom sauce over it.
- Top with mozzarella cheese and sprinkle with thyme.
- Bake for 25-30 minutes or until the chicken is cooked through.
Notes
- Serve with mashed potatoes or a side salad for a complete meal.
- You can use regular bacon instead of turkey bacon if desired.
