- 2 cups fresh spinach
- 1 cup mushrooms, sliced
- 1 cup shredded mozzarella cheese
- 1 cup shredded cheddar cheese
- 4 large flour tortillas
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
Instructions
- Preheat the oven to 400°F (200°C).
- In a skillet, heat olive oil over medium heat. Add mushrooms and cook until softened.
- Stir in spinach, garlic powder, and onion powder; cook until spinach is wilted.
- On a tortilla, layer cheese, mushroom mixture, and top with another tortilla.
- Repeat with remaining tortillas.
- Place quesadillas on a baking sheet and bake for 15-20 minutes or until golden brown.
- Slice and serve warm.

- You can use corn tortillas for a gluten-free option.
