- 2 large yellow squashes
- 1 cup shredded cheese

Instructions
- Preheat your oven to 400°F (200°C).
- Slice the yellow squashes into 1/4 inch rounds.
- In a bowl, combine shredded cheese, breadcrumbs, Parmesan, garlic powder, Italian seasoning, salt, and pepper.
- Drizzle olive oil over the squash rounds.
- Dip each round into the cheese mixture to coat.
- Place on a baking sheet lined with parchment paper.
- Bake for 20-25 minutes or until golden brown.
