- 2 cups cooked chicken, shredded
- 1 cup bell peppers, sliced
- 1 cup onion, diced
- 1 can black beans, drained and rinsed
- 1 cup corn, frozen or canned
- 2 cups rice, cooked
- 1 1/2 cups cheese, shredded (cheddar or Mexican blend)
- 1 tablespoon fajita seasoning
- 1/2 cup salsa
- 1/2 cup sour cream
- 1/4 cup cilantro, chopped
Instructions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine the cooked chicken, bell peppers, onion, black beans, corn, cooked rice, fajita seasoning, salsa, and sour cream. Stir well to combine.
- Transfer the mixture into a baking dish and top with shredded cheese.
- Bake in the preheated oven for 25-30 minutes, or until the cheese is bubbly and golden.
- Remove from the oven and let stand for a few minutes before serving. Garnish with chopped cilantro.
Notes
- For extra flavor, you can marinate the chicken in fajita seasoning before cooking.
- This casserole is great for leftovers and can be reheated easily.
