- 4 chicken breasts
- 1 cup mushrooms, diced
- 1/2 cup cream cheese, softened
- 1/2 cup shredded mozzarella cheese
- 4 tablespoons butter
- 2 cloves garlic, minced
- 1 teaspoon Italian seasoning
- salt to taste
- pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- In a skillet, melt the butter over medium heat. Add the garlic and sauté until fragrant.
- Add the diced mushrooms and Italian seasoning, cooking until the mushrooms are soft.
- Remove from heat and stir in the cream cheese and mozzarella until combined.
- Cut a pocket in each chicken breast and fill it with the mushroom mixture.
- Season the outside of the chicken with salt and pepper.
- Place the stuffed chicken in a baking dish and bake for 25-30 minutes or until the chicken is cooked through.
- Let rest for a few minutes before serving.
Notes
- For added flavor, marinate the chicken in herbs before stuffing.
- Serve with a side of vegetables or salad for a complete meal.
