Ingredients

  • 1 cup mushrooms, diced
  • 1/2 cup cream cheese, softened
  • 1/2 cup shredded mozzarella cheese
  • 4 tablespoons butter
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • salt to taste
  • pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a skillet, melt the butter over medium heat. Add the garlic and sauté until fragrant.
  3. Add the diced mushrooms and Italian seasoning, cooking until the mushrooms are soft.
  4. Remove from heat and stir in the cream cheese and mozzarella until combined.
  5. Cut a pocket in each chicken breast and fill it with the mushroom mixture.
  6. Season the outside of the chicken with salt and pepper.
  7. Place the stuffed chicken in a baking dish and bake for 25-30 minutes or until the chicken is cooked through.
  8. Let rest for a few minutes before serving.
