Instructions
- Preheat the oven to 375°F (190°C).
- In a pot, boil the diced potatoes until tender, then drain.
- In a bowl, whisk together eggs, milk, salt, and pepper.
- Spread the cooked potatoes and spinach evenly in the pie crust.
- Pour the egg mixture over the potatoes and spinach, then top with shredded cheese.
- Bake for 35-40 minutes or until the quiche is set and golden.
- Let it cool for a few minutes before slicing and serving.

- For best results, use fresh spinach.
