- 2 pounds baby potatoes
- 1 pound smoked sausage
- 1 cup shredded cheddar cheese
- 1 packet ranch dressing mix
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- Wash and halve the baby potatoes, then place them in a large mixing bowl.
- Slice the smoked sausage and add it to the bowl with the potatoes.
- Drizzle with olive oil and sprinkle the ranch dressing mix, garlic powder, salt, and pepper over the mixture. Toss to coat.
- Transfer the mixture to a baking dish and spread evenly.
- Bake for 30-35 minutes or until the potatoes are tender and golden brown.
- Remove from the oven and sprinkle cheddar cheese on top. Return to the oven and bake for an additional 5 minutes, or until the cheese is melted.
- Serve warm and enjoy!
Notes
- For extra flavor, consider adding chopped green onions as a garnish.
- Can be made ahead and stored in the fridge for up to 3 days.
