Ingredients

  • 2 cups fresh spinach

  • 1/4 teaspoon black pepper
  • 1/2 cup parmesan cheese, grated

Instructions

  1. In a large pot, bring water to a boil and cook the ravioli according to package instructions.
  2. In a skillet, heat olive oil over medium heat. Add garlic and sauté until fragrant.
  3. Add sliced mushrooms and cook until softened.
  4. Stir in the spinach and sun-dried tomatoes, cooking until the spinach wilts.
  5. Season with salt and pepper and mix well.
  6. Drain the ravioli and add them to the skillet. Toss gently to combine.
  7. Serve topped with grated parmesan cheese.
