- 1 pack cheese ravioli
- 2 cups fresh spinach
- 1 cup mushrooms, sliced
- 1/2 cup sun-dried tomatoes, chopped
- 2 tablespoons olive oil
- 1 clove garlic, minced
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup parmesan cheese, grated
Instructions
- In a large pot, bring water to a boil and cook the ravioli according to package instructions.
- In a skillet, heat olive oil over medium heat. Add garlic and sauté until fragrant.
- Add sliced mushrooms and cook until softened.
- Stir in the spinach and sun-dried tomatoes, cooking until the spinach wilts.
- Season with salt and pepper and mix well.
- Drain the ravioli and add them to the skillet. Toss gently to combine.
- Serve topped with grated parmesan cheese.
Notes
- For a richer flavor, consider adding a splash of cream.
- Feel free to substitute the ravioli with your favorite pasta type.
