Cheesy Zucchini Casserole: Easy Comfort Food with Turkey Bacon

Ingredients

  • 3 medium zucchinis
  • 1 cup shredded cheddar cheese
  • 1/2 cup grated parmesan cheese
  • 4 slices turkey bacon
  • 2 large eggs
  • 1/2 cup milk
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Slice the zucchinis thinly and set aside.
  3. In a large bowl, mix the eggs, milk, garlic powder, onion powder, salt, and pepper.
  4. Layer half of the zucchini in a greased baking dish.
  5. Sprinkle with half of the cheddar and parmesan cheese.
  6. Add the turkey bacon, cut into pieces.
  7. Layer the remaining zucchini and top with the rest of the cheese.
  8. Pour the egg mixture over the top and bake for 30-35 minutes.

Notes

  • For extra flavor, sauté the zucchini in a pan for a few minutes before layering.
  • Feel free to add herbs like thyme or basil for added taste.
