- 3 medium zucchinis
- 1 cup shredded cheddar cheese
- 1/2 cup grated parmesan cheese
- 4 slices turkey bacon
- 2 large eggs
- 1/2 cup milk
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
Instructions
- Preheat the oven to 350°F (175°C).
- Slice the zucchinis thinly and set aside.
- In a large bowl, mix the eggs, milk, garlic powder, onion powder, salt, and pepper.
- Layer half of the zucchini in a greased baking dish.
- Sprinkle with half of the cheddar and parmesan cheese.
- Add the turkey bacon, cut into pieces.
- Layer the remaining zucchini and top with the rest of the cheese.
- Pour the egg mixture over the top and bake for 30-35 minutes.
Notes
- For extra flavor, sauté the zucchini in a pan for a few minutes before layering.
- Feel free to add herbs like thyme or basil for added taste.
