Ingredients

- 2 cups grated zucchini
- 1 cup shredded cheddar cheese
- 1 ½ cups all-purpose flour
- 2 tsp baking powder
- ½ tsp baking soda
- 1 tsp salt
- ½ tsp black pepper
- 2 large eggs
- ½ cup milk
- ¼ cup melted butter
Instructions
- Preheat the oven to 375°F (190°C) and grease a muffin tin.
- In a bowl, mix grated zucchini and shredded cheddar cheese.
- In another bowl, whisk together flour, baking powder, baking soda, salt, and black pepper.
- In a third bowl, beat eggs and then mix in milk and melted butter.
- Combine all the mixtures until just blended.
- Pour the batter into the muffin tin, filling each cup about ¾ full.
- Bake for 20-25 minutes or until a toothpick comes out clean.
- Allow to cool slightly before enjoying.
Notes
- Great served warm with butter.
- Can add herbs for more flavor.
