Ingredients

  • 2 cups grated zucchini
  • 1 cup shredded cheddar cheese
  • 1 ½ cups all-purpose flour
  • 2 tsp baking powder
  • ½ tsp baking soda
  • 1 tsp salt
  • ½ tsp black pepper
  • 2 large eggs
  • ½ cup milk
  • ¼ cup melted butter

Instructions

  1. Preheat the oven to 375°F (190°C) and grease a muffin tin.
  2. In a bowl, mix grated zucchini and shredded cheddar cheese.
  3. In another bowl, whisk together flour, baking powder, baking soda, salt, and black pepper.
  4. In a third bowl, beat eggs and then mix in milk and melted butter.
  5. Combine all the mixtures until just blended.
  6. Pour the batter into the muffin tin, filling each cup about ¾ full.
  7. Bake for 20-25 minutes or until a toothpick comes out clean.
  8. Allow to cool slightly before enjoying.

Notes

  • Great served warm with butter.
  • Can add herbs for more flavor.
