- 4 medium zucchini
- 1 cup marinara sauce
- 1 cup shredded mozzarella cheese
- 1/2 cup sliced pepperoni
- 1 teaspoon Italian seasoning
Instructions
- Preheat the oven to 400°F (200°C).
- Cut zucchini in half lengthwise and scoop out some of the flesh to create boats.
- Spread marinara sauce in each zucchini boat.
- Top with mozzarella cheese and pepperoni.
- Sprinkle Italian seasoning over the top.
- Bake for 20-25 minutes or until the zucchini is tender.
Notes
- For a vegetarian option, substitute pepperoni with vegetables of your choice.
- These can be made ahead of time and reheated before serving.
