- 2 medium zucchinis

Instructions
- Preheat your oven to 375°F (190°C).
- Slice the zucchinis lengthwise into thin slices.
- In a bowl, mix the ricotta, mozzarella, Parmesan, egg, Italian seasoning, salt, and pepper.
- In a skillet, cook the turkey bacon until crispy, then chop into small pieces.
- Spread a layer of the cheese mixture on each zucchini slice and top with turkey bacon.
- Roll up the zucchini slices and place them seam side down in a baking dish.
- Bake for 20-25 minutes until the zucchini is tender and the top is golden.
