- 2 medium zucchini
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1/2 cup crushed turkey bacon
- 1/2 cup breadcrumbs
- 2 large eggs
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Preheat the oven to 425°F (220°C).
- Slice zucchini into sticks, about 3 inches long and 1/2 inch wide.
- In a bowl, mix mozzarella, Parmesan, turkey bacon, breadcrumbs, garlic powder, onion powder, salt, and pepper.
- In another bowl, whisk the eggs.
- Dip each zucchini stick into the eggs, then coat with the cheese mixture.
- Place the coated sticks on a baking sheet lined with parchment paper.
- Bake for 20-25 minutes, until golden brown and crispy.
Notes
- For extra crunch, broil for the last 2 minutes of baking.
- Serve with marinara sauce for dipping.
