Ingredients

  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup crushed turkey bacon
  • 1/2 cup breadcrumbs
  • 2 large eggs
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Slice zucchini into sticks, about 3 inches long and 1/2 inch wide.
  3. In a bowl, mix mozzarella, Parmesan, turkey bacon, breadcrumbs, garlic powder, onion powder, salt, and pepper.
  4. In another bowl, whisk the eggs.
  5. Dip each zucchini stick into the eggs, then coat with the cheese mixture.
  6. Place the coated sticks on a baking sheet lined with parchment paper.
  7. Bake for 20-25 minutes, until golden brown and crispy.
